How do we bake the finest rolls?... D'Ambrosio purchases the finest mid-west durum wheat flour in 50,000 pound semi tanker loads; 5-6 times per week. We store our flour in (2) ultra-sanitary 120,000# capacity silos housed inside our production plant. The flour is mechanically sifted to remove any impurities both upon delivery and as it goes into our production system. The flour is pressure-pumped throughout our plant into our 1000# high speed mixers, never touching the air or human hands. Our mixers electronically weigh and measure just the right amount of flour and water to be added to each batch. Our Ingredient Specialists add the precise specialty ingredients (secret recipes) to complete the dough and ready it for mixing. The bulk 1000# dough is lifted and dropped into a dough divider, weight system and shaper. Out comes the fresh raw rolls A portion of the rolls are put onto racks and into refrigeration so that their yeast-raising is retarded (slowed down) until we need them. The balance of the shaped roll dough is put into our large proofing boxes at about 95 degrees and 95% humidity for about an hour. The shaped roll dough is put into our imported (15 ft. wide and 80 ft. long) conveyor/tunnel ovens. The rolls receive their scoring (split tops), a brief steam bath and then a quick 15-minute ride through 4-temperature zones in the oven. The finished bread & rolls gently roll out of the oven and onto a screened conveyor system that takes them on a cooling 45-minute ride throughout our production facility. The fresh warm rolls come down a final conveyor ramp for metal-detection, slicing, packaging and shipment. D'Ambrosio Italian Breads and Rolls (through a superb fresh-frozen process) are now available nationwide through a national network of chain & independent distributors.
